Boiled bamboo shoot with sprinkled “Okaka” (dried bonito flakes).

Bamboo eaten by the Japanese people today are of the “Mousouchiku” variety which was brought from China to Japan in the Edo period (1603-1867).

Bamboo shoots have been eaten for a long time in Japan as they are described in the ancient “Kojiki” texts. However, it is believed that the type of bamboo was different from the one we eat today.

Bamboo shoots are said to taste better without bitterness the sooner they are harvested after they start to grow. ‪#‎Samurai‬ ‪#‎Washoku‬ ‪#‎Japan‬ ‪#‎Japanesecuisine‬
